Sour Cream Enchiladas

There was a time I was forbidden to make these.  I used to make them every now and then, but my husband complained that he couldn’t stop eating them, so I was asked not make them ever again.  Never never never.  When it comes to these favorites, I don’t listen very well.  

I love these enchiladas, they make me happy.  Whenever a friend has a baby, this is my go to recipe, I whip up a large batch!  They are my go to recipe whenever a friend comes home from the hospital, like our good friend Mike last weekend.  They are my go to recipe when we watch the Superbowl.  And always whenever I crave comfort food, and don’t care about the effects on my waistline. 

This is my mother’s recipe, given to me when I left home.  You are free to thank her for the tastiness inside, and also blame her for any pounds that creep up after eating them.

Simple Sour Cream Enchiladas

Ingredients:

4 chicken breasts, fully cooked & shredded

2 dozen white corn tortillas

1 16 oz. can green enchilada sauce

2 ounces additional green chiles

14 oz. sour cream

4 cups shredded cheese (Jack or Mexican blend)

*using nonfat sour cream and lowfat cheese will decrease the calories!

The Little Cabinet That Could

Hello!  Today I thought I’d share the quick and easy makeover on my jewelry cabinet that I refinished last week.  After I painted the inside of my closet, I wanted the little cabinet to coordinate with the new look, but it was a dark mahogany color that wasn’t working for me anymore. 

I happen to love rich dark wood, and often I hesitate to paint it.  But since this was no antique, rather a mass produced piece from a decade ago, I turned to spray primer and spray paint to give it a fresh modern look.  Now I’m loving the gray with white trim!

Step one was to give it a coat of spray primer.  You know I love the brush on version of Zinsser’s oil based primer, but for smaller pieces of furniture you can go right ahead and prime with a spray can, it works great !

A Great Before and After!

I really really enjoy Superbowl Sunday.  I love the excuse to sit on the couch eating game day food and watching the big showdown.  I’m usually bored by the halftime show (this year was no exception), but I always look forward to the commercials.  This year’s commercials were unfortunately a big disappointment, but one in particular made me laugh. 

I think it’s because I can’t get enough of a good ‘Before’ and ‘After’ ~ this is a clever take on all those HGTV shows I love. 

“It totally opens it up, we gave it a fun vibe, clearly this is a room people want to hang out in!”

Watch for the pan from ‘Before’ to ‘After’ ~ loved it. 

I think many men wish it would be just this easy!
