There are plenty of Oysters Rockefeller recipes out there, this one is a slight modification of The Marshall Store recipe. The Marshall Store is one of the stops along California’s Highway One between oyster farms where you can get fresh oysters on the half shell, and savor their delicious Oysters Rockefeller with a view of Tomales Bay.
Ingredients for 1 Dozen:
2 tbsp melted butter
1/2 cup coarse breadcrumbs
2 cups diced spinach leaves (cooked and drained)
1/3 small finely diced red onion
1 cup plain yogurt
1/2 cup grated Parmesan
1/2 cup shaved gruyere
1/4 cup nutmeg
1/4 teaspoon anise seed
1 dozen large oysters
Preheat oven to 350 degrees. Coat coarse breadcrumbs in melted butter and set aside. Mix spinach, onion, yogurt, Parmesan, nutmeg and anise seed in a bowl. Spoon over freshly shucked oysters layered in a bed of rock salt.

Layer oysters with freshly shaved gruyere.
Sprinkle with buttery coarse breadcrumbs and bake in the oven for 15 minutes at 350 degrees.
Serve on a platter and enjoy with a glass of white wine and more crusty bread.
