Raspberry Lemontini!

Hello everyone, happy Sunday, I’m back and finally rested from the SNAP Conference!  It was a whirlwind three days, and I left Salt Lake City on Saturday completely exhausted.  I traveled with my sis, so we had a blast spending time together, plus I had the opportunity to meet a lot of bloggers I’ve never met and hang out with some blog friends too.  I didn’t snap many pics of the trip since I was running around everywhere, but I am looking forward to some of the recaps we’ll be reading in the upcoming days.

I promised the recipe for one of my favorite cocktails earlier this week, so here goes.  This one is fun for when you’re hanging out with the girls!  It’s a raspberry lemontini made with fresh ingredients that can be prepped in advance of your upcoming soirée.  Here’s the quick way to make them, enjoy!

Ingredients you’ll need: cocktail shaker, ice, citron vodka, Triple Sec, large lemons (1 for each drink), 12 oz. raspberries, 1 cup sugar, sugar rimmer, lemon wedges for garnish, lemon juicer, martini glasses.

To make the fresh raspberry juice, rinse your berries and cover them with 1 cup of sugar in a saucepan.  Over medium heat, stir until raspberries are completely dissolved, then using a mesh strainer, separate seeds from juice (scrape bottom of strainer with fork to assist).  Set aside juice to chill (may be prepared in advance).

When ready to serve, for each drink combine in a cocktail shaker filled with ice: 2 oz. citron vodka, 1 ½ oz. fresh raspberry juice, 1 lemon fully squeezed with lemon juicer, and 1½ oz. Triple Sec.   Rub a lemon wedge around the rim of a martini glass and dip in sugar to coat the rim.

Shake and pour into martini glass and garnish with lemon wedge.  Cheers!

  4. It’s been cold and rainy here (DC) all day, with more cold tomorrow. Kind of messing with my mind after all the beautiful spring weather we’ve had this year. I was ready for summer (and thus summer cocktails), and then got sucked back to reality. Sheesh.     • Hi Helen, I think i think i think… Marshalls? But I pick up glassware everywhere, it could have been Kmart, Target too…
