SPICY PUMPKIN SOUP

4 Tablespoons Butter
1 medium Onion, minced
1/2 Teaspoon Curry powder
1 (14-ounce) can Pumpkin puree
1 1/2 Teaspoons Kosher Salt
1/2 Teaspoon Cayenne Pepper
1/4 Teaspoon freshly ground Black Pepper
2 Cups Chicken Stock
2 Cups Heavy Cream

Saute onions &amp; curry in butter in heavy bottomed pot until onion is tender. Add pumpkin, salt, cayenne &amp; black pepper. Blend for about one minute. Stir in Chicken Stock &amp; heat to gently boiling. Reduce heat and stir in heavy cream. Heat through but do not boil. Serve with hot french bread for dipping. 
I used my immersion blender before adding the heavy cream to make the consistency extremely creamy.

This is one of my family&#039;s all time favorites! The love it and it is so quick and easy to make, I do it often!]]></description>
